How To Make Soft Jau Rotis

Barley has far less gluten than wheat, so the dough is less elastic and rotis can crack at the edges. This is normal, and it is manageable.

1. Use warm water rather than cold. It helps the dough bind.

2. Knead well, then rest the dough for 15 minutes under a damp cloth.

3. Roll gently, with a light hand and plenty of dusting flour.

4. Cook on a hot tawa.

and get a dough that rolls easily. Increase the barley as you get used to it.
