Our rava is milled from kari bansi (black bansi) wheat, a traditional Karnataka durum variety with dark grain, grown for generations in the region. It is harder than common wheat and gives rava with more bite and a deeper, nuttier flavour. This is a regional wheat, not a commodity one - and no national brand sells it.

Our rava is stone-ground from durum wheat - the hard, high-protein wheat that gives semolina its characteristic golden colour and firm, separate grain when cooked. The colour is natural. We do not bleach it.
