HOW TO MAKE SOFT MILLET ROTIS
Millet flour contains no gluten, so the dough behaves differently from wheat atta. It will not stretch, and 100% millet rotis can crack at the edges.
For soft rotis:
- Use hot water, not cold. It helps the dough bind.
- Knead well while warm, and rest the dough for 10 minutes.
- Pat the dough out by hand, or roll between two sheets of parchment.
For an easier start:
- Blend 50% little millet flour with 50% wheat atta. You keep most of the nutrition and get a dough that rolls like a normal roti.
- Once comfortable, increase the millet proportion gradually.
For dosas, batters, porridge and baking, use it at 100% - no blending needed
