Sona Masoori is the everyday rice of South India - light, aromatic, and small grained. Ours is left unpolished, which means the bran layer stays on the grain instead of being buffed away to make it look white.

That bran is where the fibre and most of the minerals sit. It also means the rice cooks differently from the polished rice you are used to. Read the cooking section before you make your first pot.

Why This Rice Looks Beige, Not White

The slightly off-white, beige tint is the bran layer. Polished white rice has had it stripped off by abrasion, along with much of its fibre.

The colour is a sign of authenticity, not imperfection. Unpolished rice will never look as uniformly white as the polished rice on a supermarket shelf, and it is not supposed to.

 What to make with it

Sona Masoori is the everyday rice, not a celebration rice. It suits:

- Plain steamed rice with sambar, rasam or curry

- Curd rice - it softens beautifully

- Lemon rice, puliyogare, bisi bele bath

- Pongal and khichdi

- Fried rice and pulao, once cooled

It is lighter and less starchy than short-grain rices, and its small grains do not clump when cooked properly.
